Paleo Breakfast Casserole

This casserole is super simple to make with only five ingredients! Make it on Sunday and eat from it all week. Perfect for those busy weekday mornings!

 

Ingredients

1 dozen pastured eggs

1 packet Teton Waters polish sausage (bought at Costco) - use any sausage you'd like

1 sweet potato, diced (I didn't peel first and it was fine)

1 cup spinach

1 Tablespoon Coconut oil (or jus enough to lightly coat the sweet potatoes and grease the casserole dish)

1/2 teaspoon salt

1/8 teaspoon black pepper

 

Instructions

Roast Sweet Potatoes:

Preheat oven to 400

Dice the sweet potatoes

Place the potatoes in a bowl and add coconut oil, stir until lightly coated

sprinkle with salt

Bake for 15-20 minutes

 

Casserole:

Use the leftover coconut oil to grease a 9x11 baking dish (cooking times will vary if using a different size baking dish)

Slice the sausage links to bite-size pieces - these are precooked (if using ground sausage you'll want to brown that on the stove first)

While the sweet potatoes are roasting, whisk the eggs in a medium sized bowl

Add the sausage, spinach, salt and pepper to the eggs

Stir until mixed

Once sweet potatoes are done roasting, add them the egg mixture

Stir just enough to mix the ingredients together

Pour the mixture into the baking dish and cover with foil

Bake at 400 for 15 minutes

Remove foil

Place back in oven and bake for another 15 minutes or until the center of the casserole is done
